I mean, you *can* kind of go that route if you want. The main issue with going at it from that way is that it's all based entirely on your particular build far more than "this is the OP thing you get." So for example the game has the Ring of Balance which gives you +5 to your AC and gives you a permanent resistance to an enormous amount of the debilitating effects in the game (Fear, Confusion, etc.) and would absolutely be one of the "you must get this item" kind of deals in any other game. Here, however, it comes with the "build tax" in that your character must be True Neutral to actually use it in the first place. In addition it's not like your characters won't be able to essentially get around anything they come across without it just because spellcasters let you do basically everything. Yeah it's a huge deal to get away with those sorts of things (it's part of why Azata is so busted, though for other effects than what the Ring deals with) but you aren't going to really get the "looter RPG" feel that you're talking about.

Really you should view the game through the lens of "progress story, become god" rather than anything to do with gear. Mythic paths are busted and let you do some really goofy nonsense. And if you happen to find a piece of gear that explicitly functions really well with what you're doing, then you scored. About the only piece of gear that will always be relevant is Finnean, and that's more because they are a companion in addition to being gear (though you definitely cannot underplay some of the best stats in the game + the ability to change weapon type).
