Isn't there a well known bust that was actually produced in her lifetime? Between it and the surviving coinage which is somewhat consistent with her portrayal in said bust (yet comes from different places in the Roman empire), I'm of the opinion that she was mostly Greek. I'm skeptical that she was of entirely Greek ancestry (it was not uncommon for rulers of foreign extraction to hook up with the native nobility, as it was politically advantageous to do so in many respects) but the few remaining 1st century BC portraits of her lead to me to believe that she had some fairly pronounced European features (particularly her nose, which is easily the most prominent feature in all such images).

The truth is, nobody knows for sure and short of finding her remains and doing years and years of testing on them, we never will.
