like, there is Mexican pop, Mexican ballads, Mexican rock, Mexican metal, etc, just like *gasp* many other countries, yet that one variant of music with the trumpets and hats and guys going like KEKEKEKEKE AAYYAAHHHA is what gets considered to be Mexican music in other countries.

I think that's just from a lack of exposure. There are plenty of music genres that people enjoy in Mexico. But people from outside of the country won't really experience the music culture in full. Only bits and pieces of it.

I live in Los Angeles and while it's not the only Spanish music I hear, I do actually hear a lot of people playing Rancheras, Banda, Corrido, etc. You know, the genres that people typically view as "Mexican music"
