You don't need to. Just ignore and run past them. You don't have to fight anything within a dungeon aside from the boss, unique looking enemy's for special drops, or ones that drop certain gear.

Other then that you're better off just running past everything. This extends to open world as well. Although there are some situations you're want to make a area safe either to find something in peace or reach and open a few chest. However that choice is usually up to you.
