I get that it is more than likely that they could have both survived if they did, but it doesn't seem like either of them would have actuallyrisked trying that.

No, they did debunk it.
The myth wasn't "Why did the characters choose to do this?". The myth was them both dying if they were both using the door. A thing that Cameron himself said.
He didn't try to explain it away using history, character justifications and the like as you are doing, he just said "nope, both dead".
