I feel like there are times that race/skin color can be important to the character, but much more often than not, it just comes down to the story and the smaller details.

With Ariel, I think her red hair is the most iconic part about her (other than, you know, being half fish). And they nailed that. Also, she needs to look pretty young, since a major part of the story is Ariel being a youth who is rebelling against her fathers wishes. The actress nails that characteristic down as well. Her skin color is completely unimportant. Mermaids arent real, so theyre skin color is inconsequential.

Another character that always comes to mind for me was the casting of Michael Clarke Duncan as Kingpin in the Daredevil movie. They got a big dude to play the role of Kingpin, and that was an important characteristic for whoever played the role of Kingpin, in my opinion.
