I'll let you in on this. You don't actually control your hair color in Splatoon. It's a dynamic color that changes in every match based on your team's color (which, in standard games, is randomly chosen from a whole bunch of team combinations). In the Splatfest it will always stay as your team's color (which in your case is yellow anyway).

Really hope you have fun with your first experience. I joined Splatoon 2 a year and a half into it, so now I get to watch as a newer generation of players starts their first Splatoon game. And I've never been here for the beginning of a new game so it will be new to me too even as a veteran.
