Which brands and kinds are you comparing? In all my experience, mostly with the unflavored and unsweetened varieties, I have found Almond milk to have a very neutral flavor, like thicker water. Soy milk, while not "bad" to me, has always had a more noticeable flavor. I usually drink Silk brand. And if you haven't already, maybe try Simply Almond milk, the same people that make orange juice and stuff like that. My favorite kind.

As for plant-based alternatives, I have yet to find a good fake cheese or chicken, but I think Impossible/Beyond beef is just as good as the real thing, for most ground beef-like substitutions. If it weren't for the higher cost, I would order those options more often, but regular beef is usually cheaper.
