While certainly an issue (one that could be solved pretty easily by adding an option to set your default to only show "Uncategorized" things), how many demos do you have that you need to formally organize them? In my experience, demos tend to be pretty short-lived: I download them, I either play them a day or two later or I forget about them indefinitely, then I delete them after making a decision on whether or not to buy the game (unless the data carries over, in which case I save them until I buy the game). I very rarely have more than one or two downloaded.

Again, though, folders and other organization are really only relevant for games you haven't played in a while, so having to sift through a couple layers of organization to get to them is so infrequent that it's not a huge deal. Anything you're currently playing will be at the front of the list, making further organization irrelevant unless you're the sort of person who has a dozen games on the go at once (in which case, make a "currently playing" folder and add/remove things as needed).
