When you have no choice but to eat gluten-free, then it doesn't really matter if it tastes like sawdust, right? But now that you have all these people doing it for "health" reasons, who want to have, say, a gluten-free sandwich, gluten-free food companies actually have to try to make their bread appealing, or the "health" people could just decide this is too hard and go buy normal, tasty bread. As a result, over the last few years the more inedible bread brands have slowly been disappearing, and there's more than one that actually taste good! Stuff like ready-made gluten-free desserts have been popping up as well. And flour mixes that you can swap 1:1 for wheat flour (instead of having to buy like five different kinds of flour to mix up and pray it works).
