Food trucks have 1 or 2 orders of magnitude less startup and labor cost than a restaurant, which is why restauranteurs do them before opening a brick & mortar.

There's also an interpretation of "least profitable" which includes the chance that you will make profit. If you have high startup cost but your chance of making it back is good, then it's profitable even if it will take a while. Like buying real estate or something.

Restaurants have high startup and labor cost AND low chance of ever turning a profit so it's gotta be that.
