That bothered me but not as much because Ive always understood the Ironborn to be mostly hype. But I agree, Ramsay running shirtless into a fight in very close quarters against armored opponents and not being immediately torn to shreds was very, very stupid. But that's the thing, it was just Ramsey and dogs. Like, maybe the Ironborn overhype themselves compared to Westerosi men, but they primarily ran away from dogs as Ramsey was just standing there holding 2 more, iirc. I seem to recall the scene when they enter the cell area being Ramsey just standing there, holding 2 dogs, 2 dogs running at the Ironborn, and then the next scene is them running in terror through the woods.
