It's not your tastebuds, you're just not cooking them enough.

If there is any hint of raw whiteness in the onion/garlic, it will be sharp and bitter. If you roast them down to a brown mush, they are extremely sweet. I can understand calling roasted garlic 'not sweet' because even when it's really cooked, there is still a hint of sharp flavor, which might come across as bitter to you, but the onions should be entirely sweet.
