It's on the PS3. I'm not quite sure what race/skills I want to use, yet. I'm looking at trying a thief-type character: sneak around, kill people, all that good stuff. Metal Gear Solid aside, I've never really played this way at all in a game. If you've tried it, what do you think about it. Or, better yet, what have other people done?

I played a very sneaky character on my first time. I loved it ^_^
Just walk in 'sneak mode' all the time and you'll have full points in sneak in no time =P
But basically whatever you do the most is what you'll be best at. Makes more sense than using melee weapons all day an then putting 13 points into 'ranged weapons' when you level up.
IIRC there is a trait that gives you like 10x damage when you hit with a dagger while undetected. So good! And much earlier in the trait tree there is one that gives you stronger bow crits out of sneak. Definitely your bread and butter trait for sneaking and killing.
