I'm not convinced that a bunch of ignorant people handing down legends that describe their Ganondorf experiences has much bearing on how the game actually works. Can Ganon survive a nuke? A gunshot? Having to face his shadow inside a TV? We don't know because he never has to do those things, and the characters in the game who explain this "canon" don't either.
In fairness he could PROBABLY survive a gunshot given his impressive regeneration. A missile? Probably not.
He would probably no sell a gunshot, forget merely surviving it. Let's not undersell him too much.
