He also randomly learned Ice 2 and I didn't have an Esper equipped that had the ability to learn that spell. Odd.

He must have equipped the Ice Shield. Many of the shields you pick up late game will teach spells to characters as if they were espers, but they don't give stat bonuses like espers.

Actually, question: Is this one of those games where OVERleveling can potentially screw you over? FF6 had that whole Magicite level-buff that you could screw yourself out of really abusing if you werent careful.
