Try to get through the main quests until you've visited 2 towns. After that, go wherever your heart bar desires.

That said, health is important to avoid being one-shotted. Neglecting stamina can end up being frustration, but don't neglect health too much in trying to avoid that.

I've upgraded my stamina twice now. Still rocking three hearts.
