I used my ninja food processor with the bread paddle thing to mix it even though the recipe didn't recommend it. Nice to see it still came out okay in that regard. But that took about 3 minutes and then you let it sit for 15-20 hours. When that's ready, you mix it with more yeast, flour and water and mix it into a wet dough. Let it sit in a bowl for an hour to rise, then you fold it like 4 times and let rest for 45 minutes and repeat that 3 times. Preheat oven with cast iron and a Baking sheet at 450F for an hour. Then you form the bread gently into two loaves and put on parchmentand let rest under a cloth for 30 mins to proof. Transfer to the hot rack in the oven with the parchment and Add a cup of ice to the cast iron that is underneath the rack and close and bake for 25 minutes The ice creates steam which helps crisp up the crust. |
