Looks nice. I'm not a big fan of ginger tho. And it looks more thicc than liquidy? Or am I wrong?
I typically dont like ginger either but it complements carrot soup well and fresh ginger isnt as overpowering as powdered. The consistency was very smooth and velvety thanks to my vitamix.

How bad is thw work life balance?
Yup. I liked my former company but it got political. But there is a new VP now actively working on addressing things. She and I have been speaking. I do like her and think she will bring some good things.

As for this other company, one of the interviewers mentioned he works from 7am to 6-9 pm. And said if I wanted a 9 to 5 job this wasnt it. What I liked with my old company is my hours were flexible and I rarely worked over 40 hours a week.

Parappa apple muffin with no cinnamon would be a crime. I used both cinnamon and allspice (since its a blend of nutmeg and cloves). Its in the recipe my man

I do wish I put more cinnamon in the streusel though.

Full recipe (somewhat approximated)

Dry ingredients:
2 cups whole wheat flour
1/2 tsp baking soda
1/2 tsp salt
3/4 tsp cinnamon
1/2 tsp allspice

Wet ingredients:
2 small apples (I used winesap), peeled, cored and pureed with about 1/3 cup of apple cider
1 egg (I think it should be 2)
1/3 cup vegetable oil
1/3 cup softened sour cream
3/4 cup raw honey
1 tsp vanilla extract
1 cup chopped apple to small cubes (I used Mutsu)

Streusel
Mix of flour, brown sugar, softened butter and chopped pecans (I just eyeballed it this tbh)

Icing (also eyeballed this)
Powdered sugar (maybe like 1/2 cup or so), half and half (approx 1-2 tbsp), 1/2 tsp vanilla

Mix dry ingredients in bowl. Mixed wet ingredients minus chopped apple in another bowl. Slowly incorporate dry into wet until fully combined. Fold chopped apples and fill muffin pan to 3/4. Top with streusel then bake at 325F for 25-35 min, until toothpick comes out clean. Cool fully and drizzle icing on top.

I still have a lot of apples from our apple farm visit so I decided to make apple cider muffins. This is my first attempt at baking without following any recipes and I have to say Im pretty proud of how they turned out!

I used winesap apples that I pured for the base. It was my first time getting those but they have a rich, cider taste. I also added apple cider and chopped Mutsu apples. I used cinnamon and allspice for flavor. I tried making them somewhat healthy by using whole wheat flour, raw clover honey instead of sugar (straight from the farm), and oil instead of butter. I did use some sour cream for moisture. Topped it with a streusel and light icing. Overall I think I got the proportions right but could have used another egg for more fluffiness I think. Wasnt sure about using 2 eggs versus 1 given all the liquids I had.

They still taste delicious!

Sorry Cleo. I guess I didn't know all the points of view. I still think adoption should be more popular. But I will think about what you said.
Well Im glad I was able to give you some more insight on what an infertile woman is going through.

[LFAQs-redacted-quote]

They discovered I had PCOS about 1.5 years ago, after we tried conceiving on our own for nearly two years. I have no symptoms of typical PCOS. My cycles are normal, I dont have weight issues or excessive body hair. My gyno kept refusing to run tests on me and kept telling me to try harder when I told her I was worried we werent conceiving. So we ended up seeing a fertility specialist who did the tests and discovered it.

Because of my PCOS, I basically release immature eggs most cycles. Even when we did IVF and they retrieved my eggs, only about 40% of them were mature enough to use and thats with a bunch of hormones they pumped into me. Typically they get about 80-90% mature eggs from women.

sorry I touched a nerve to some people. but like I said, my family has gone through adoption and i know firsthand how it can change a life. and yea, we didn't adopt a baby. my sister was 8 when she was adopted. and the track of her life shifted in a dramatic way. I just think of all the unadopted orphans out there who nobody wants

It sounds like your parents adopted after having their own biological child (you). And more power to them. I think its wonderful that they did that. But that doesnt mean you should trivialize womens struggles in conceiving their own children. You have no idea the kind of social pressure they experience. You have no idea what its like to get bombarded by questions on why you dont have children on a regular basis. My husband gets no questions while I have someone asking me about it about every week or two. There is so much social pressure on women, the older we get especially. And seeing pregnant women and babies everywhere, while knowing it cant be you is one of the hardest things to overcome. Im surrounded by babies, kids birthdays, baby showers, etc and every time I attend these events I have to brace myself for the inevitable influx of questions. Just last week at a casual lunch at my cousins, one of my older (male cousins) started giving me the third degree on kids and why I shouldnt wait too long or Ill be too old. And as Ive learned from experience, if Im honest and tell people that I cant conceive then its the inevitable you should just adopt comment, or dozens of follow up questions or other unwanted pieces of advice like dont stress, it will happen for you I just know it or some anecdote of some person they know that had a miracle baby years later.

To each their own. Some people choose to adopt and others dont, while others weigh their options. Theres no one path thats better than the other or that can erase the struggles (emotional and physical) women face when they are unable to conceive.

People are so uneducated about the cost, absurd waitlists and possible legal complications of adoption. I always laugh when people tell me I should just adopt like I can go buy a baby from a baby store today. Meanwhile IVF was covered for me at 100% with my company with just the cost of meds out of pocket. I have a few embryos on ice as well and am looking to join another company who will cover the cost of transfers. Im not opposed to adoption, but at this time its not worth the headache or cost compared to IVF. Well cross that bridge when we get there.

Also TC, as a man I dont think you can truly comprehend a womans biological need to reproduce. I cant explain it but right around 30 I just started having these overwhelming feelings of birthing a child. I couldnt help it. And knowing that I cannot do what is expected from women from the dawn of time can bring such a complex range of emotions. As a man, you will never get the number of questions regarding children that I do, from friends, family and complete strangers. I am shamed by society for being unable to reproduce and treated like Im broken.

Were fucking built that way and its sad that you think you can just shame women who want their own biological children with 0 real comprehension on the matter. Get a fucking clue or kindly keep your opinions to yourself.

Honestly it does sound like you have a lot to be anxious about. It may seem like its just the same as ever, but over the years financial issues will chip away at you.

I know you had a topic earlier on about being frustrated with feeling stuck at your job. Maybe sit down, do some research and draw up a list of objectives for yourself on what you want to achieve and what it will take to get there. Thats what I do when I feel overwhelmed and want to take control of the things I need to get done. I sit down and write a plan of action. Just that act alone helps ease my anxiety.
