Those home tests were positive. Nobody else in the house got sick & I didnt isolate her in her room. We dont eat out, my husband eats keto and nuts and cheese add up, kids and I cant eat tomatoes, potatoes, or peppers (including pepper spices) so really no cheap processed foods. Back in the day, after high school you wouldnt get a minimum wage job at a store, but instead start working at a manufacturing company and work your way to better pay. Those jobs also had great benefits including awesome pensions. Schools try to make lunches as cheap as possible. No way a vegetable heavy menu will take off. Kids eat so many carb heavy meals at school. In a week our local school will have cheese pizza, cheese sandwich, pasta with meat sauce and French toast sticks. And then 1 day of chicken nuggets or a patty. Hamburgers or hot dogs happen once a month. Its not like kids are getting tons of meat - its just too expensive. Sides of potatoes and corn happen often. Which are technically vegetables but all the carbs are not leading to any sort of balanced diet. Corn comes up often because it is a whole grain, but when you already are eating so many carbs its not what you need. Saying they are going vegan one day is great for PR but until you actually see what kids are getting, its up in the air on whether its great meals. I do not buy ready made foods ever. I only drink water or unsweetened tea. My kids both have unusual allergies (tomatoes, potatoes and peppers) so it makes it easier to never cheat and order out. If I do and an allergen is in the food, Ill lose a night of sleep with them vomiting until its bile. They also have a dairy intolerance so I dont use cheese in my cooking, although at times I will use butter sparingly. That being said Ive gotten good at making quick from scratch meals. Always have frozen vegetables that you can steam. I use rice over pasta (its low fodmap so it agrees with me better than pasta). You can get a rice cooker to make it even easier (a good Japanese one). Pan cooked chicken is easy - a little bit of olive oil, salt & pepper on the chicken, sear both sides and then cover and wait. I bake meatballs so after mixing and rolling them, its another put in the oven and wait thing. Slow cooked pork is also easy (I do make a gravy with the drippings so that is the most work intensive part). The pork i sear with some salt, pepper and rosemary and then put it in the crockpot fat side down with a couple tablespoons of cooking wine and water all day on low.
