Yeah. I have no pets. And its been raining all day the last couple days so i havent really gone out.

Like I've been chilling in my house playing video games, lurking the boards, and watching TV or whatever.
After a while i will just out of the blue just start talking because i start wondering when the last time i said anything was since i live by myself.

Noticed it a lot more since my fiancee is out of the country for 3 weeks.

Baking it first or sous vide gives it an even pink all throughout and takes the guess work imo.
Takes longer, but if you have time to prepare, its worth it.

Having a meat thermometer helps too, but ive never used one...

I go with the reverse sear method.

Bake it low at 250 degrees in the oven for like 45-50 minutes depending on the thickness.

Heat up a cast iron really hot and sear each side for like a minute or 2. You can butter baste it after you flip it with thyme and garlic for more flavor
