what kind to get? what kind of pan to cook it in? how to make it medium rare without making it raw? etc etc

a steak that will be cooked, then sliced into stripes to be served to guests.

If only it was that easy. You mentioned a charcoal grill, which means you either have to be an expert with charcoal or make sure you find the right balance of heat and make sure the heat is reaching the entire steak evenly.

Marinate the fucking thing, hot pan, however many minutes on one side to your liking, then flip and same thing.

done <5 minutes per steak

Marinate the steak in at least a $10 wine or $15 champagne along with some spices and a little salt then grill it until medium well.

Get boneless ribeye. Preheat oven to 400 - 500.
1. Oil both sides of steak. Make sure the oil has a high smoke temp
2. Season that shit to your liking
3. Preheat a cast iron skillet on high heat to smoke on stove top or grill.
4. Place steak on for two minutes
5. Flip steak, let sit for 2 minutes
6. Put a square of butter onto middle of steak and insert into oven
7. Use thermometer to check for temp. Remove steak when it is 5 degrees below desired temp
8. MOST IMPORTANT STEP remove steak from oven and cover it with something for 5 minutes to let the juices soak in.

Then serve.

Actually, throw it in a Ziploc, boil for 2 hours at 130, and you'll get a nice medium rare steak.

I go with the reverse sear method.

Bake it low at 250 degrees in the oven for like 45-50 minutes depending on the thickness.

Heat up a cast iron really hot and sear each side for like a minute or 2. You can butter baste it after you flip it with thyme and garlic for more flavor

For a good ribeye marinate it, sear it on both sides for 2 minutes in a cast iron skillet, pop it in the oven at 500 for 5 minutes then you're done. Perfectly cooked rare.

Pretty close to how I make my steaks and they turn out great

Though if you're making steaks for multiple guests for Christmas or whatever, maybe look into doing a prime rib roast or something.

Baking it first or sous vide gives it an even pink all throughout and takes the guess work imo.
Takes longer, but if you have time to prepare, its worth it.

Having a meat thermometer helps too, but ive never used one...

Hmm hard for me to explain. Ive made enough steaks that I can know by just touch when theyre medium rare. They should feel like how the your palm feels under your thumb.

I use a nonstick pan though cast iron is best. I salt my steaks for an hour and get them to room temperature. Get the pan super hot and then I sear it for a few minutes. Flip it then and get a sear and then I lower the heat and add a bunch of butter, garlic and thyme and just baste it. Few more minutes and its done. Get a meat thermometer if you want to check for the cook and arent sure.

The other day I got ribeyes and tried another method. I sear one side in the pan, then flipped it and put it in the oven at 450 for 6 minutes then back on the stove on low (flipping it again) to baste and complete cooking. Got a perfectly even medium rare.

I dont like doing each sides the exact times and then finishing in the oven because one side gets more cooked than the other.

Nothing wrong with slicing cooked steaks before serving it as long as people eat it right away. Not everyone wants to cut their own steak.
