The caveat is that they cant be a magical girl transformation or one that ultimately leads to just them being in skimpy clothes.

The only character I can think of is Biscuit from HxH, but I legit cant think of anyone else.

Tayuya and kinda Konan from Naruto as well.
A show of kindness may not do much help, but a show of cruelty may do much harm.

Lunch from Dragon Ball has a condition where whenever she sneezes, her personality (and appearance) changes. Purple hair is super nice. Blonde is super aggressive and tends to always have a machine gun on hand.

Does Ranma count? Turns in to a girl when splashed with cold water and back to a guy with hot water.

I guess there's also Shampoo. Same hot/cold water thing but she turns in to a cat.

* some of the Precure in the Pretty Cure franchise (to clarify, this isn't referring to their normal magical girl transformations, it's referring to the fact that some of the series have the girls getting additional forms beyond their normal magical girl transformations)
* most of the LRIGs in the WIXOSS franchise (the card game has a "grow" mechanic where the LRIGs rank up and gain new abilities, and that's shown in the anime too)
