Chewy, on the cusp of being crispy. 99% of the time, crispy tastes burnt. Meat shouldn't be crispy.

When the fat side is curled and crispy but the more meaty side is still chewy. It's that delicate balance where you have to take it out of the oven at just the right time before it all turns crispy.

FFVII Remake: A disaster in the making.
