But then they would be more likely to bend, and let your food spill over. I assume that the manufacturer of these plates have engineered their products to have a rigidity that accommodates for their surface area.

You can make a big paper plate with four smaller plates

My brother manufactures paper plates. He is always giving away stacks of them. So I asked. He says "I don't know, I just operate the machine."

As someone who works for a paper plate company, no, they do not know better then you. They make absolute garbage for plates.

They presumably know better than him why they design their plates the way they do. That's possible even if they don't know better than him how to design a plate (though they probably also know that, they just don't design them to be structurally optimal because it's not cost-effective).
