I think she was kind of making fun of you with that "not my date" line. Not mean, just teasing you for a soft out to lunch invite instead of a confident asking her on a date. If that's the case, then don't do the lay low thing. Straight up ask her out, make it clear it's a date.
Honestly, chances are she's into you romantically, and if she'll ever pursue that it's gotta be really soon. Don't worry about rejection
Oh yeah one thing that was kind of weird was that both at the party and at the lunch today she kept applying chapstick. I don't want to be weird and think too much into that but I hadn't seen her ever do it before. It was almost like she was expecting the possibility of a kiss.
Also at the party she walked me to my car at the end of the night (I parked really far) but then left really fast after hugging. It almost kind of felt like she chickened out of something happening.
