With the asterisk that if I was making it for, like, 20+ people I would be fine with making it.

I made tonkotsu ramen once the traditional way

That shit was ridiculous. Never doing taht again unless I'm feeding like 8 people and I have a sous-chef.

Yup. Like, it scales up easily so making it for a crazy number of people is proportionally not a big deal but oh my god was it such a pain for only four people.

This was me when making a Gattueu St. Honore. In fact, I gave up on it towards the end. Years later, my friend's wife offered to bake something for my birthday and I chose that. Was I a monster for choosing that? Yes. But at least I was a monster with a delicious cake.

Yeah, after making ramen from scratch, ramen is actually incredibly cheap at restaurants for how much labor goes into a bowl
