Luke also viciously hammered his father down to the ground and cut Vader's hand off in a moment of rage, right after Vader threatened his sister.

I need some elaboration on this front.

No, and people that think otherwise clearly had stopped paying attention because Luke specifically explained later that he wasn't going to. He basically had force spider senses, detected such an ominous presence around his nephew that he drew his saber without thinking but caught himself from actually doing anything, but in that process Ben saw a drawn lightsaber and jumped to a sensible conclusion from his perspective.

That event was specifically and directly explained how it made sense for both Luke to hate how he had reacted while still never intending to do harm and for Ben to think his uncle was about to murder him, and people still missed either or both.

If you don't see the difference between beating down a massive, active threat, who is actively bent on going after your loved ones, while your friends are all getting blown up right outside the window, and trying to kill a sleeping child who poses no active threat because of bad things you think he might do one day eventually, then I don't know what to tell you.

Luke admits, in a moment of weakness, he considered it, but he wouldn't have done it.

This again? I always wonder if people who are confused by this actually watched the movie or if they just saw a bunch of YouTube videos about how bad it is and are trying to stir the pot

They should make a gritty movie about just this. Like, The Lighthouse, except with Ben and Luke.

Luke's judgement & vision were clouded by the eminent darkness of Kylo & Snoke, and visions of the future confused him in that moment. Kylo, then Ben, ofc proceeded immediately to level the entire academy. "It all happened so fast."

It's funny that this "jedi spider sense" just makes them instinctively pull out a lightsaber any time they ahappen to sense the dark side.

That's why their sabers were always turned on during the clone wars. And why it was so easy for the inquisitors to spot them from a mile away. Kind of a dead giveaway.

Or maybe that's not how it works.

This isn't how it works, and you know it's not how it works. Luke peered into Ben's mind, and what he saw was so sudden, so shocking, so overwhelming that he felt an urgent need to defend himself and everyone he loved.

Luke was a wildcard. A sarcastic asshat who Obi-Wan/Yoda and Vader/Sidious took interest in to attempt to win him for their side. The story of the trilogy hinges around the question of whether he will turn to the dark side. Yoda even suggests there's a very real chance that he could. So the surprise ending is when, out of nowhere at the 11th hour, when the moment of truth comes, he actually turns Vader to the light instead.
