So Koji Fox was the main translator and localizations guy who handled the language and pop culture references in the game. He left after Stormblood to help with FF16. He was replaced by a new person named Kate who is a pretty vocal non-binary lesbian or something like that. After Stormblood, whether it be due to a shift in FFXIV's dev team or Kate's own influence, FFXIV began to add a lot more things into the game's world throughout Shadowbringers and Endwalker that could go under the LGBT umbrella such as the non-binary fairies of pixie land who use they/them pronouns, the super popular LGBT-ships Ryne Gaia and Cirina Sadu, Hythlodaeus who is a feminine-probably-gay-character, the dragons being retconned to being non-binary, etc. amongst other things. I posit that with Susan being right-wing, she likely decided not to return for ShB and EW voluntarily, because she didn't like the direction the game was going when ShB was in development. She probably no longer wanted to be involved after non-binary and more LGBT characters were added.
