Theres a cookie speciality store near me that makes mind blowing snickerdoodles, and you should know Im NOT a snickerdoodle fan, at all. But these cookies literally shocked me with how good they were. Ima def get em again someday.

anyway the point is, snickerdoodles can be good but it comes down to the right recipe I think.

I was able to find an old one for you. Luckily I still had one from back when I was showing them to some family members (hence the higher resolution): https://i.imgur.com/b9vjtIE.jpg

And they are pretty easy to make, but I wouldn't call them a standard recipe. They are more a mash-up of several different cookies that go for the "richest outcome" with the decisions. The cookie "base" is an extremely rich dark brown sugar + browned butter cookie that has a very molasses-y taste that is then mixed with dark chocolate and and a rather rich butter toffee. The entire thing can basically be boiled down into "make toffee -> brown butter -> mix everything" but if you aren't used to any step I guess it could be tricky. Browning butter is what I would argue is probably the "hardest" bit, but that is more that you absolutely must be paying attention rather than being hard as butter goes from "browned" to "burnt" lightning fast (though if you haven't browned butter for baked goods before I strongly recommend it as it adds an excellent rich, buttery taste to anything you are using it for).

Lately I have been keeping flour, sugar, butter and eggs on hand. Cookies are really easy if

you set the better and eggs out to warm first

you just get the flour inside the dough without really mixing it in

you use parchment paper on the cookie sheet

you set a timer and take cookies out when it goes off.

*** Cookies just need to collapse a bit when removed from the oven.

Lol, I'm fine with giving you mine. It's not like it's a secret recipe or anything. :V

For the toffee you'll need 1 stick of unsalted butter, 1 cup of light brown sugar, and 1 tsp of salt (kosher or iodized doesn't really matter). Throw all of it into a pan and put it on medium heat until it reaches 300F. Then pour it on a tray (use parchment paper to make sure it doesn't stick) and throw it in the freezer to harden. Finally make the dough with 1/2 cup sugar, 1 1/2 cup dark brown sugar, 2 tsp espresso powder (a good secret ingredient to have for any baked good that involves chocolate, btw), 2 tsp salt, and 1/2 tsp baking soda. Once the dry ingredients are mixed add the brown butter, 2/3 eggs (it depends on size), and 2 tsp vanilla extract. Once those are mixed add 2 1/2 cup flour (all purpose), ~1 cup of dark chocolate chunks (it's more a "play it by ear" thing and you kind of just add as much as you think you can get away with ;P), and the toffee chunks. Once all of the bits have been folded into the dough scoop it into little balls and throw them into the fridge to set for 1-2 days (2 days is the best, but it's really just that you want to let it set for a period).

Once the dough has set throw it into the oven at 300F for 18-20 minutes (the outside should be just browning, for your visual timer). Once out of the oven shape it a bit with a spatula and sprinkle some sea salt. Let it cool until firm, and then it's good to go.

Let me know if you need more info, this is just me transcribing my recipe.
