For a local grocery chain. I never expected to enjoy it so much. Once I start cutting I don't realize how much time has passed. Sometimes to the point I'm late for my breaks

What all do you cut? Do you do porterhouses and T bones with the saws? A lot of places dont do that.

ribeyes were always the easiest with filets being the hardest for me. It took me a looooong time to get the touch needed for the filets

the vegan meat patty's aren't bad.

the chicken isn't so good :(.

my dinner: ground beef burrito's with buffalo rice and beans.
i bought out 20 boxes of the discontinued rice a roni before they got taken off the shelf.

even have enough for a leftover burrito for breakfast.

interesting. the only options I ever see in stores here are prime and choice. While there is usually a noticeable difference between the two I have had quite a few choice steaks with excellent marbling and tenderness every bit as good as the prime we normally get.

What kind of avocados?

like a completely different fuckin steak. That prime steak was fucking splooge worthy. The one I had tonight was good.

Idk what the avocado was. It wasnt a normal avocado. It looked crazy. I wouldnt have known it was an avocado if the sign didnt say so

Cut a bit of everything from petite sirloins to filets. Yeah we do use band saws for the bone-in beef and pork. Faster that way I suppose. Some of our stores even do tomahawk steaks. At least one store in our chain is suppose to be their version of Aldi. I'm not proud of the meat we cut there. It's the ungraded beef we get from Mexico. Was cutting short loins for t-bones and porters and frankly I wouldn't of bought them. Sure they were $3.99/lb but so little marbling you'd have time to chew over that decision.

Sounds about perfect for a slow braise, the tougher and more connective tissue the better.
