He was phenomenal in DS9 Bashir was such a bad character in the pilot and the actor (Plus the writers obviously) turned that round into being one of if not the best character in the show. I love looking for things in the background or "on the edges" of where the veiwer is expected to be focused. It would be funny as hell if he did it on purpose, but I think it was just the way he slid his hand/fingers on the table top. It would be great if Siddig comfirmed it one way or another. One thing all the Star Trek series did was find amazing actors. Off the top of my head, Denise Crosby is about the only one I could never stand.
