I think the Zelda series has some good Castles and Palaces: Hyrule Castle (Twilight Princess and Breath of the Wild), Deku Palace and Ikana Castle (Majora's Mask). Hyrule Castle in the games I mentioned was quite expansive and the last two had great visuals and music! I also liked Bowser's Castle in Paper Mario.
