One playthrough got me all the achievements

If you mean literally everything, I think like 10 to see every minor variation of the ending. Three (or possibly two) if you want all the major content.

You can pretty much see everything important from 2 playthroughs. 1 being a Pacifist run where you let everything live and the other being a genocide run where you kill everything.

To see "everything" is a huge undertaking as the ending changes depending on who you kill or don't kill. Like killing toriel but not papyrus gets you a different ending than if you kill papyrus but not toriel and then you get an even different ending if you kill both.

Then there's the hidden fun value which changes on every new game that locks away some secret content to only certain fun values.

And then there's also the extra content you get for dodging the credits.

Better to just YouTube it all.

3 if you wanna see the main endings but there's variations on the neutral ending depending on your actions.

Just be careful because some endings permanently lock you out of other endings.

Pacifist -> True pacifist -> neutral -> genocide run is probably the minimum. Plus you don't actually need to completely start over to get true pacifist after seeing the pacifist ending, but you need to start pacifist because Genocide makes getting true pacifist impossible.

Pacifist and neutral are the same ending the only difference is with a pacifist ending you can load your last save and access the true pacifist ending without having to replay the entire game.
