Don't think I've ever used the parking brake.

Parking brake on, using it frequently is good for it. Keeps rust from building on moving parts and seizing them.

If a spring in the parking brake shoe that's exposed to the elements doesn't move for months or years rust will build up, and turn the entire spring into a useless block. If the spring is moving constantly any rust that does form won't be strong enough to keep loops of the spring bound, keep cables from moving, etc.

Do you also always wear a seat belt? signal when changing lanes? turn on your headlights just because it's cloudy ? as long as you know what you're doing you don't really need to be so cautious when driving. People that constantly speed and change lanes without signaling because they are confident in their driving ability. People are more vigilant than you think.

why on earth would you NOT put on the parking brake for any reason?

You don't need to do that if you have electronic fuel injection, that was for the old carburetors to warm up and work properly. Most people here have likely never used a car that needed to warm up before use in the cold.

In many states it's also technically illegal to park without the brake though it's largely never actually enforced
