Here's a recent quote from Austin Matthews of the Maple Leafs:

I mean, we have one goal and thats obviously to win, he explained. I could really give a sh-t whatever everybody else out there thinks about hit this, hit that, like, I just want to win. So I could really care less.

Isn't he technically saying 'I could care less than I do now but I don't so I actually care' and "I could really give a shit meaning I can really care about what they're saying'

Wouldn't 'I couldn't give a shit what everybody thinks' make more sense?

it comes from "could/couldn't care less" and only "couldn't" makes sense. "I couldn't care less" means you literally don't care at all, so caring less than you currently do is impossible. "Could care less" means you care more than the bare minimum/not at all so therefore you do care to some extent which negates the point you're trying to make with the statement.
