One thing that always bothered me about most fighting games--especially older ones--was the lack of a Vs. Computer mode. There was no way to play out a proper match against the opponent and on the stage of your choice. The only 1P modes were usually things like Arcade, Time Attack, and Survival, which gave you random opponents. And typically, the only way to actually pick your opponent and stage was in the Training mode, which by its nature is not an actual match you're fighting.

This is the one thing that sullies one of my favorite games SoulCalibur II for me, which even had the audacity to have a "Battle Theatre" mode where you could pit the AI against each other; luckily, as of SoulCalibur V at least (haven't played SC6), you can directly fight the AI in Vs. mode. But games like Ultimate Marvel vs. Capcom 3, Tatsunoko vs. Capcom, and Tekken Tag Tournament II lack the mode, which--again--kind of ruins it for me; Smash Bros., on the other hand, has always had the option to play matches against whoever you want.

I know most people play fighting games to play against other players, but sometimes I just like playing against the AI of my choice in proper matches.
