I am only half Italian, but that side had a huge influence on me.
On my mom's side, it was just a quarter Scottish and Polish.
So the Italian side, took over big time.

Having said all that. I never thought of Cristopher Columbus day as an Italian Holiday.
It just never came up. If anything we thought that Christmas and Easter were the big days.

My Second Cousin was a Prominent Catholic Preast.
And my Great Grandmother came over on the boat.
I was so blessed to have met her.
She lived with my Grandfather in a Farm Stand/Home.
They sold Flowers, Fruits and Vegetables, and Statues...because Italians are good with cement.
There was always food pre-made in the fridge, and there were Roman Catholic images everywhere.

~Anyway, Garlic, Olive Oil, and Basil for life.

The Italians kicked Columbus out and he had to go begging in Spain, where he was such a piece of shit he was imprisoned after arriving back in Europe because of what he did to the natives.

The fucking country is named after an Italian I don't see why we need to have a holiday for one of the biggest assholes in history.

My uncle who I am nutrail on, did once do something very awesome.
There was a house down the street, that took so much pride in its lawn that it was crazy.
.....That's one thing.

But, once, said homeowner's son called my Auncle a WOP.
He didn't know what that meant, so he went home and asked his dad...by Grandfather.
Once he realized what it meant, he went back to the house.
Knocked on the door.
Asked for the kid who said it, and punched him in the face. On his doorstep.

i love my Italian heritage. it's a big part of who i am and a big influence on what i cook and like to eat.


Right it has had a huge influence on how I cook basically everything

Edit: Would eat!! Though I probably would have gone more angle hair!
~There are people who don't know how to cook Spaghetti.
But ya, I am hard pressed to not add Tomatoes, Basil, Garlic, Olive Oil as well as others into the mix.

The fact that it is a healthy diet makes it even better.
