Like if Putin shoots non nuclear missiles (he'd be insane to nuke his neighbor) at Ukraine. Can American defense systems intercept those?

Depends on where it is shot from I think. If shot from a nearby location, no. If shot from the pacific coast, sure.

If theres a military base/outpost in the area I would imagine theres a large chance they have anti-missile defence. Im not a military expert though.

A lot of it comes down to where, what country fired it and what country it is directed at. Some affairs I'd assume we would take no part in, depending on the scenario.

Look at a world map.
Russia is already shooting missiles at Ukraine. The missile will most likely already have hit the target before USA even realize that a missile is being fired.

Not really no. For the size of missile that he would be and is shooting at Ukraine, you would need in-theater anti-missile systems. Something like a ground based Phalanx or SAM system. For us to intercept it would need to be an ICBM realistically with what we have.

Do you mean ICBMs? Were like maybe 20 years away from being able to defend against ICBMs and thats just self-defense, not in defense of other countries.

Sure. Would we? Maybe. Maybe not.

This question has a lot of variables that would need to be answered to give a more definite answer:

1) What missile defense does US have in the area?
2) What kind of missile is it, does it have some cluster component?
3) What interest does the US have in protecting said county?
4) What are the consequences for shooting down said missile from whoever fired it?
5) What is the cost, both in terms of money and revealing of our technology and its location, going to be?

...and many more.
