Gus Fring, paranoid that a single person might possibly be out to kill him, sets up an elaborate tunnel system between multiple houses in his neighborhood (which is covered in CCTV cameras); the homes being populated by actors that he has on his own payroll for 18-hour shifts, constantly watching the neighborhood by patrolling on bicycles.

I think the 18 hour shift thing was Mike referring to his people everywhere, not just for gus' home alone. The "kitchen" was referring to the pollos kitchen and how the guy Mike planted at the restaurant didn't know how to cook very well.

And I'm sure this was all set up well before lalo - surely gus had enemies before lalo, it's not like he just built this overnight when he first started to suspect lalo wasn't dead
