I love scallop risotto. My husband demands lobster risotto for his birthday every year so I havent made it in a while. But I usually at least make scallops to go with it as an app

That was probably the beat risotto I have ever had. Unfortunately, that was a very expensive meal, with the scallops, champagne, fresh parmsean and a lot of vegetable stock (not broth). Ended up being $60 for 2 people.

@Bishop_Hastur that is a reference to the size of them. Those are a fairly large, but not huge, size. Sea scallops.

Just takes patience. Add a litlle liquid at a time and stir regularly. So not really hard but requires focus for like half an hour. Helps if also drinking the champagne that was partly used in the risotto

I actually don't know much, but my understanding is that bay scallops are a little different and tend to be quite small. Works with certain pastas, stews and ceviche, but the larger sea scallops are better when more of the main entree.

Someone feel free to correct me if wrong.
