The ocarina songs help you to slow things down and speed things up if needed and it just gives you a chance to explore things on the first day and figure out what you need to do at what points to be successful in something. I replated it last year after over a decade of having not played it, and kept my own physical notebook, and just made notes of what everyone was doing around town so I could figure out what I needed to do with the sidequests.
