Don't interview at big tech. They don't value you and you get siloed off so badly. If it's just 1 massive commit, yeah, that's a problem. If their public GH is nothing but forks with 0 diverging branches, that's also another problem. But if you look at mine, you'll see repos with rich commit histories where you can see how I incrementally build tests and documentation. Also, just ask the candidate about the code they wrote lol.
