My friend is a GM at a restaurant in San Diego. His employees exchanged work days without him knowing and he's hella tripping.

I can understand that they should have communicated this to him but he's ultra mad about this shit to the point where he's gonna fire them. Told him he's gonna end up on some job review. He power tripping for sure.

if they're covering the shift then no. maybe your friend is angry that he's becoming less and less necessary and he's fearful that upper management will just get rid of his position?

it's probably just about not wanting it to become a regular thing because eventually someone will fuck up and leave a shift uncovered.

it was the other bartenders last day, if he worked that day it's a different check cause i have to give him is last check on his last day, but because he didn't come into work i have to redo his whole check.

so by her doing that i had to go redo the whole payroll

Have no clue what this means. Guess they made more work for him.
