It is. I've been a professional Brewer for the better part of a decade and a nationally accredited BJCP beer judge, top end brewing is far more nuanced and complex than winemaking.

Mezcal/Agave/Tequila is the most complex booze to me.

So many varieties of agave, the growing conditions, terroir, cooking methods of the agave, distillation process all completely change the flavour profile.

Such a fascinating spirit. Not to mention some of those wild agaves take like 12 years to grow and harvest. It extracts all the flavour from the ground and through cultivation.
Not to mention I love how spiritual and cultural it is to Mexicans. I really can't wait to go to Oaxaca and explore the mezcal regions.

And it also tastes fucking delicious.
