Hm. My first thoughts go to Thousand Year Door. I enjoy fighting Krump (The X-Nauts 2nd in command) But Rawk Hawk, especially in the rematch is a delight, as is Grubba, since it feels good to beat such a slimeball. But Shadow Queen, perfectly cinematic, serious, and with a nice twist in Peach. One of these, but probably Shadow Queen. Edit:Ah crap, I forgot that final Cackletta fight! It ranks up there. Aaaand now I'm reminded of the Dark Bowser/Dark Star from Bowser's Onside Story. Perfect music, amazing counter attacks, fist clashing punches!
