But yeah. Was bored, felt like making something, still had a decent amount of the last loaf of bread I made, so tried to adapt my bread recipe into a donut recipe. Basically just removed all the herbs / spices, quadrupled the sugar, and doubled the margarine. Then, baked them only about 2/3rds the usual time, and fried them the rest of the way. Made a really nice lemon-lime glaze out of coconut oil, icing sugar and some flavor drops (the kind made for adding to water to flavor it - the specific one I used is the Vital Zing brand, though I don't think that brand exists outside NZ). Don't have a proper donut cutter so used a huge soup cup for the outer ring and a shotglass for the inner hole. Recipe time! Note that (a) where units differ between countries, assume NZ versions of those units; (b) anything measured in "tablespoons" I am talking about taking a literal tablespoon scoop, not necesserially the formal measure (but cups are the actual measure); (c) this recipe is vegan because my partner's vegan, but I see no reason that using the non-vegan equivalent ingredients (ie: cow milk instead of soy milk; butter instead of margarine) wouldn't work. Mix the following ingredients in a big-ass bowl:
Mix the following ingredients in a seperate container (I used a large cup):
In a third container:
When the yeast mix is frothing, mix it with the other liquids. Give it a few minutes then mix it in with the dries, mix it really well, knead for a while. Once that's done, let it rise for about an hour, then make the donut shapes. I did this by taking a ball of dough, rolling it out flat, then - as mentioned - using a soup cup to cut a circle out from that, then a shotglass to further cut a hole in the middle. You may need to slightly shape it more by hand afterwards. Lay them out on a sheet of baking paper, pop them in the oven at 170c (340f) for about 17 minutes on the "bake" setting. Take them out, let them cool a little bit (about 5 - 10 mins), then pop them in a frypan with about 1.5cm (about 0.6") of cooking oil. Fry for about a minute, flip, fry for another 45 secs or so, remove and set on a paper towel to soak up some of the excess oil. After a minute or two, apply the glazing. ...speaking of which, the glazing recipe is simply coconut oil, icing sugar and water-flavoring drops. I can't give measurements for that one as I did that purely by "yeah it looks right", you'll have to experiment a bit. I've heard about using water from boiling potatoes in bread, haven't tried it yet though. as an addition (2:1). and use iced water for mixing it. i usually an egg too at the final mix. usually i mix the flour, sugar, milk powder, and yeast first, then add the mashed potatoes. after they mixed well then i add 75 ml of ice water and egg to the mix. and then finally i add some butter and small amount of salt (1 teaspoon). mix them until it's elastic(?), cant found the proper word for it. --- You have the right to remain silent.
