My best fusion Ive made is a thai red curry chicken risotto.
Thai flavors, Italian technique. Stock is a chicken stock infused with thai flavors like kaffir lime leaves, lemon grass, galangal. Instead of wine, I use rice vinegar. No cheese. Before I add the rice to the shallots and garlic, I add red curry paste and a bit of coconut milk, then the rice vinegar, rice and cook the risotto as you would, oh yeah I marinade and quickly fry the chicken before the shallots etc and set them aside, add the chicken back later. Sometimes I add oyster mushrooms. To add more creamyness I add more coconut milk. Old pic of a chicken-less thai risotto. I love to try fusion food. --- ... Copied to Clipboard!

Those look dope! I wish I could remember my Asian burger recipe. Thought it would turn out shit so didn't bother writing it down, but I was just slapping random sauces and spices in there, but it all came together super well. Asian coleslaw and green onion were the toppings though, that much I remember.
