They did talk in the books, but not very much, and it was almost entirely in Fellowship for obvious reasons. Even in the books, Legolas was probably the most neglected character of the fellowship in terms of characterization (still better than what they did in the movies though, ick) and if I recall correctly, that was because Tolkien was originally going to have Glorfindel join the party as the elf representative.
