I feel this is the dish that gets fucked the most.
I'm not even a good cook but I had to buy and cook scallops the other day because i was so curious about them.
Literally season them before they hit a piping hot pan, 1 minute on either side and take them out and done. Mine came out with a nice sear and they basically melted in my mouth and were delicious so i'm assuming I did it right

Ramsay's standard for cooking them correctly is probably far more strict than what you're holding yourself to. Scallops in a Michelin-style setting are quite difficult, they burn easily, they dry out easily, and they can look deceptively done properly when they actually aren't. They're also juggling multiple tables' orders at once and have to time them such that they're ready when the other stations are ready so everyone gets their food at the same time still hot.

Also, the producers of the show have admitted they cast 3-4 chefs who they are confident will go far and everyone else is just brought on for looking like they'd be an entertaining hot mess on camera.

Risotto is easy as well. As long as the stock is kept heated and you're constantly tasting it until it reaches consistently it's seems really hard to fuck up.

What I can't cook for the life of me is salmon. My salmon fillets also end up fine on the inside but the skin gets burnt to shit :(.
I would be fucked if I had to cook salmon on the show.
